I’m in Switzerland. Yes with that I struggle if I want approx 120 degree (nibs) I have to start with a preheated 210 degrees (chamber) and exhausting slow down to 150 degrees (chamber) so I can reach after 25 minutes 110 to 120 degrees for the nibs. Any other suggestions? Or, is it totally wrong how I roast?

Where are you located? I may be able to connect with some colleagues in Brazil who can help answer this.

I do have some experience with the larger roaster and, because they are electric, they are slower than other kinds because of the design.

In general, I would recommend doing a very quick roast to puff the shells then crack and winnow and then roasting nibs.
