Episode 39 Overview

As I’ve written in other posts, one of my favorite episode formats is to interview a chocolate maker or chocolatier and taste and respond to their work, live.

In this episode, I will be interviewing Mark Burrows of Pollinator Chocolate, which is located in Carbondale, CO.

Pollinator Chocolate
Handmade, Small-Batch Chocolate from the Heart of the Rocky Mountains.

As I am in Arizona and try to keep track of regional makers, I was aware of Pollinator but had not met Mark or tasted their work. One of those things changed when I met Mark at the recent Southwest Chocolate & Coffee Fest. I walked by their stand and we made plans to meet up before the show started on Sunday morning.

Rather than hash all that out here, I am going to wait for the livestream where Mark and I can talk about a range of topics – one of which is that Pollinator also runs a coffee shop. Another is that Mark will be returning from the Craft Chocolate Experience and we can talk about the differences between the two shows – the audience, the kinds of questions asked, and more.

While at the SWCCF I got four bars from Mark and that is what I am going to taste, live. I have not tasted any of these bars before – everyone will be getting my first impressions. The four bars are:

  • Tanzania/Kokoa Kamili 70% (unflavored, no inclusions)
  • Ecuador 70% with local bee pollen (rose, cornflower, and marigold flower blend
  • Dominican Republic 70% with honey “foam”
  • Dominican Republic 70% with local lavender buds

Mark and I also had a short discussion about awards programs and I introduced him to the Craft Chocolat Challenge – which seems a perfect fit for a smaller, startup company.

We’ll get into that as well as take comments and questions from members of the live audience.
