Episode 30 Overview
When many people think about the history of cacao’s migration out of the Americas, the focus is on the move east to Africa. What most are unaware of is the movement west, particularly to the Philippines. The Spanish in the 1700s transported Criollos to the archipelago as a part of what is known as the Acapulco-Manila trade route.
Today, when most people think of cacao in the Philippines they know of Davao (on the island of Samal) as a producing region – not many know of cacao on the island of Bohol, known for its “chocolate hills.”
How (and when) cacao made it from Manila (located on the island of Luzon) to the island of Bohol is not known.
For much of the history of chocolate in the Philippines, the focus has been on transforming beans into tableya, tablets of unsweetened paste used to make hot chocolate (tsokolate). The cacao used to make tableya is traditionally not fermented
Since the beginning of the craft chocolate movement in the 1990s there has been a growing interest in Filipino cacao because of the genetics transported there. Recently, Filipino cacao has been awarded heirloom status by the HCP.
At the same time, there has been an explosion of local chocolate makers, several of whom have received recognition on the global stage through international chocolate competitions.
It is my pleasure today to be able to chat with Dalareich (Dal) Polot, the founder of Dalareich Chocolate House, located on the island of Bohol, home to the famous chocolate hills about her family’s connection to cacao in the Philippines and growing a chocolate business in a producing country.
