Episode 101 Overview

In Episodes 99 and 100, I explored the what and why of how I would kit out ultimate and budget chocolate and confectionery workshops. Episode 99 (Ultimate) did not include a retail component, while episode 100 (Budget) did.

Episode 100 explores some options for kitting out a workshop on a budget. What equipment would I select to transform cocoa beans into chocolate and make chocolate confectionery and other items for wholesale and online and in-store retail? And why?

In this episode, I will be exploring lower-cost items (generally costing under $1000, though some are more expensive) that you should consider taking a look at when kitting out a budget workshop – the whats and whys as much as the whiches.

Again, I have to point out that I am NOT talking about kitting out a workshop for the lowest-possible cost. I am again thinking about a combination workshop/retail situation where a major goal is to maximize flexibility when creating finished products.

Mike King of Encore Coffee & Chocolate emailed me and asked (and I will address these questions during the episode though it might spill over into another episode!

When you stated “budget” (workshop) - really what I was looking forward to was hearing your opinion on best value vs. budget.

When looking at tempering machines, does the startup go with a melter and silk, a Chocovision product, tabletop tempering or continuous tempering? What is the best equipment just above the hobbiest level.  

Most startups will startup with hobby gear like I did, but where does it make sense to invest, where can you do more DIY solutions.?
