Episode 46 Overview

In this episode, I will be joined by Nataly Nicholls, founder of Magno Chocolates, located in Medellin, Colombia. As I’ve written in other posts, one of my favorite episode formats is to interview a chocolate maker – especially when they’re checking in from a producing country – and taste and respond to their work, live.

Magno crafts Gourmet Chocolate Bonbons & Bars with the finest Colombian cacao, local natural fillings, and finishes them with a kiss of 24k gold leaf. Magno Invites you to eat beautifully.

I learned of Magno from a post in the r/chocolate subreddit and after a short correspondence with Nataly was intrigued enough about their story to schedule a video call that led to scheduling this interview and tasting.

I received from Magno two products for today’s tasting, one of which is their Origin chocolate/coffee tasting box:

Origin (Coffee & Chocolate Tasting Kit)
We can say with confidence that Origin is the best box of chocolate to come out of Colombia. And that’s no accident. It’s the result of countless taste tests, research, and collaboration between Magno Chocolates and Honesto Coffee. This exquisite selection brings together coffee and cacao from 6 different regions of C

The other selection to be tasted is a trio of bars:

The perfect bar Kit
The kit includes: Cookie Chunks Bar: Semi-dark chocolate (58% cocoa) with chunks of cookie dough and crunch. Weight: 85 g - 3 Oz Golden Berries Bar: White chocolate with caramelized macadamias, strawberries, and freeze-dried physalis. Weight: 85 g - 3 Oz Salted Caramel Bar: Semi-dark chocolate (58% cocoa) with caramel

Sourcing Map

One area where Nataly and I chatted a fair bit was ingredient sourcing. I was in Colombia in 2022 and spent my time in Bogota (the airport), in the north in the Sierra Nevada de Santa Marta, and in the northwest between Monteria and Necocli. I took the locations Nataly sent me and pinned them on the map below to help get a sense of the range and diversity of Magno’s sourcing practices.

Format

The first half of the episode will be spent in the interview with Nataly, exploring the history of Magno, inspirations, chocolate in Colombia, and more. The latter half will be spent in the tasting – which will include (for the first time) coffee specifically matched to the chocolates.
