Episode 40 Overview
As I’ve written in other posts, one of my favorite episode formats is to interview a chocolate maker or chocolatier and taste and respond to their work, live.
In this episode, I will be interviewing Sally McFadyen co-founder of Argencove Chocolate, located in Granada, Nicaragua (where I have visited).
It turns out that I crossed paths with Argencove co-founder Peter McFadyen back in 2015 as they were considering where in the world to set up this business. I ran into Peter at the Southwest Chocolate and Coffee Fest – the first time I think we have met in person. I was using two of the Argencove bars in my tasting classes and was impressed with what I tasted and what I learned about their story – they not only make chocolate from beans they own the farm (the Finca Rio Grande) and grow the beans they use.
Here are the five bars I will be tasting with Sally during the episode, I have only tasted one of these:
- Batch No18 80% dark
- 92% dark
- 70% dark, flavored with banana, cinnamon, and cloves
- 70% dark, flavored with passion fruit
- 35% white, with pecans and panela
Sally and I will explore the history of Argencove, Nicaraguan cocoa, what it has meant to be a cacao farmer in these turbulent times (and more), and field comments and questions from the live audience.
