Episode 119
Again, I am not certain when I first met Warren in person. However, I do have a photo I took of him for my Faces of Chocolate series back in 2017. (The original image, taken on an iPhone, was modified by the Tintype app from Hipstamatic.)
In this episode, Warren and I covered some of the history of the Fu Wan, starting with Warren’s background before he started the company, his inspirations, and more. We also tasted (I tasted) four chocolates:
- 70% Taiwan #9 Ping Tung Double Ferment Rough Ground
- 70% Beer Yeast #1 “Armstrong” Ale- Style Rough Ground
- Spring of Austronesia – Praise; 70% Honey Fermented dark / 38% Alianthus Prickly Ahs Green
- 62% Tie-Guan-Yin Tea
Program Note On rewatching, I noticed there is a lot of discussion around packaging, especially as it relates to branding, that is worth watching.
Other Links/Resources
Caputo’s (Utah) offers a wide range of Fu Wan bars, including two of the bars tasted. Some bars also available from Cocoa Runners (UK).
I don’t yet have buying links from EU countries. When Warren sends them I will add them in.

Following up on the mention of betelnut.
Link to bottom vs top fermenting in beer - ale vs lager(ing) and more.
