Tandy Peterson spun up Embers Chocolate in the early months of 2021 ... while COVID lockdowns were in full force in many parts of the country.

While starting out making single-origin bars from beans (she still does), Tandy, who is a chef by training, leans heavily into her culinary background when developing her flavored and inclusion bars, matching flavors and textures from around the world to the flavor profiles of her chocolates.
The bars tasted.
I first encountered Embers as a judge in Season Two of the Craft Chocolat Challenge, and in Season Three (2024) Tandy became the first “Master” having been awarded in three different seasons of the challenge.

Although Embers is based in the Phoenix area and I live only a 90-minute drive north-ish, we met in person for the first time at the Midwest Craft Chocolat Challenge in Rushville, Indiana in November 2024.
In this episode I will be tasting a selection of bars (they should be delivered Monday so I have no idea what they are as I write and publish this) with Tandy and talking about her history, process, and plans for the future.
