This is an interesting watch for those of you out there looking to purchase little granite wheeled “melangeurs”. Bonnat has a long standing reputation of producing some of the finest chocolate in the world. As you will see numerous times throughout the video, he makes his chocolate just as I do mine – in Universal conche/refiners just like the ones I sell. There’s a reason why the best in the world use this equipment….
