There are many options and variables that go into making a decision on what tempering machine is going to be best for you.
A) How much chocolate do you need to temper each day?
B) How many different types of chocolate do you need to temper?
C) What are you making? Bars? Enrobing slabbed ganaches? Making shells?
We need to know these things at least before we can answer.
