Over the past week or so, the focus here on TheChocolateLife has been on alternative ingredients (chocolate, sweeteners, and milks) as well as on what it means for a food to be healthy.

Recently, oodaalolly have been working with a brand new alt.milk from the company Perfect Day that is plant-based. However, the manufacturing process, which uses precision fermentation (performed by a genetically modified strain of yeast), results in a product that is non-GMO (the GM yeasts get filtered out) and is nature identical to dairy-derived whey protein. So, while the final product is lactose free and therefore safe for people who are lactose intolerant to consume, it is not suitable for someone who is actually allergic to the proteins in cow’s milk.
During the episode, we’ll discuss some of the physical characteristics of the powder and how it is to make chocolate with. I also received sample bars and we will be tasting them live. They arrived a couple of days ago but I will not have tasted them before the livestream.
