My guest for this week’s Tuesday live stream is Alejandro Campos of Wolter Chocolates, based in Comalcalco, Tabasco, Mexico. The Wolter family business was founded in 1958 and today has a working cacao farm, chocolate factory, and retail store, all on the grounds of the historic Hacienda La Luz. Topics today will include the history of Wolter, cacao and chocolate in Tabasco, and what it takes to compete on the global market selling couverture to Michelin-starred chefs in Europe.
