Episode Overview
I am used to the school year in New York starting the week after Labor Day. Here in Arizona, the school year has already begun, and I led a class on chocolate for 23 homeschooled students between the ages of 5 and 14 this week.
In the past, I have gone to my kids’ schools on parent/career day and talked about what I do in chocolate ... so standing up in front of a room full of young children is not new territory for me.
In this case, I will be giving the class on the premises of a working bean-to-bar chocolate factory. However, given hygiene (the need to get all of them into booties and fair nets) and safety issues, we are likely not going to organize a walkthrough of the back-of-house operation. But, of course, we’ll be tasting nibs and chocolate and I have props.
Concepts That Will Be Discussed
My approach will be to start by sharing my experience – what gets me excited about working with chocolate, and what keeps me excited after working in chocolate for more than twenty years.
This is where the idea of looking at the world through chocolate-covered lenses occurred to me.
Rather than lecturing (an all too easy mode for me to get into), I am going to focus on asking the students questions about what they know and encourage them to ask me questions. Not Socratic dialog, but basing the discussion around their knowledge.
I think of each of the following topic areas as lenses through which I get to look at the world from a chocolate POV. I am hoping that each student in the class will find at least one topic that interests them personally. If so, it will be a success!
