There are various plants that you can use to reduce humidity. Get a humidity thermometer and some plants like peace lily and see how well they help. If you could lower it enough without having air blowing around it’s probably better

High humidity makes making chocolate and confections more difficult. You are going to want to consider air-conditioning (to maintain temperature, and this will help reduce humidity). A dedicated de-humidifier may be required.
