DNA Chocolate of Chandler, AZ is in the news. It’s a good article, but the contention that criollos are the oldest beans is not correct. It’s been established – and accepted by most of the scientific community – that what we call Forasteros from South America predated what we call genetic criollos. I’d be interested to know if the beans have been genetically tested to determine what cluster they fall into.
