Making Freckles
I need to make “freckles”. A disk of chocolate with “hundreds and thousands” sprinkled on and melted into the chocolate. Diameter about 15mm each and I need to make about 110Kg a week – so quite large I guess.

Any thoughts please? I’m thinking a depositor with ability to add inclusions. Am I on the right track?

Too large for moulds I think

If you want to “sprinkle on and melt in” a depositor that can handle inclusions is not the way to go unless you want the hundreds and thousands to be distributed throughout, and be completely covered by, the chocolate. You’re looking for an effect like chocolate nonpariels only larger?
